I just tallied it up, and over my 3 days in Mexico, I ate seafood 7 times. We had swordfish tostados, grilled mahi-mahi, crispy shrimp salad, smoked salmon for breakfast, fish tacos, and even sushi (there was an on-site Japanese restaurant!). But my favorite seafood meal of them all was a beachside lunch of seafood paella. I find paella to be one of the most comforting foods its warm, soft, savory, and an amazing vessel for healthy veggies and seafood. I dont make it at home much, because it always seems overwhelming with a long list of ingredients. But this recipe is actually quite streamlined, and includes mostly items that I keep on stock all the time alternatively, paella is perfect for substitutions.
