mediterranean tuna & pasta

Last week was crazy! Since I didn’t have time to get to the supermarket, I wasnt sure which MyPlate recipe I was going to make. Then, I remembered a meal suggestion from Food Networks Melissa dArabian in a magazine (cant even remember which one). She mentioned mixing canned tuna with tomatoes, capers and olives.
Sounded so easy. And, delicious. And, a perfect complement to whole wheat pasta with a few of my favorite additions, of course.
While the pasta was cooking, I mixed canned diced tomatoes, canned white beans, chopped black olives and capers. After rinsing this mixture to remove excess sodium, I added diced yellow bell pepper and canned light tuna. Then, I tossed with the whole wheat pasta and a little olive oil and topped with a sprinkling of feta cheese. I served with deep purple grapes to round out this MyPlate meal. So easy, very tasty and on the table in about 20 minutes!
