mackerel, tomato, and cucumber breakfast bagel

My Nordic breakfast this week was a smoked mackerel breakfast bagel.Smoked mackerel definitely packs more of a seafood-y punch than the surprisingly subtle taste of sardines.It reminds me quite a bit of smoked salmon and would pair perfectly with a smear of cream cheese, which Ill add next time.Seafood has always been a speedy food to prepare, but these sunrise seafood meals are especially fast because they take advantage of canned and pouch fish.This little open-face treat took me no longer than three minutes to make (and probably only about three minutes to eat Ive been ravenous when I wake up ever since my race!).
