Tonight I got home late and was ravenous. Luckily, the salmon burger recipe my Aunt Rita sent me to try took less than 10 minutes from on-paper to plate. I halved the recipe since I was only cooking for one (a 7-ounce pouch of salmon was perfect) and now have a leftover burger brimming with omega-3s for later this week. I also substituted sun-dried tomatoes for the red pepper because I had them on hand a stretch, I know, but it worked. Overall, the dish was tasty and satisfying, albeit a little unformed.
