avocado, quinoa, and fava bean salad with shrimp by @Ottolenghi

I made a spin on this unique recipe a few months ago and have been craving it ever since. The ingredient combinations in Yotem Ottolenghis recipes are so surprising; they just stick in your head and keep calling until you have no choice but to make them again. Nothing else can quite satisfy your craving. This time I followed the original recipe more closely, and I actually found the fava beans to be a bit too earthy. I think if Id added one more lemon that would have balanced the recipe out perfectly. Maybe the addition of shrimp upped the citrus needs too. Regardless, my craving for this perfect warm-weather salad was met.
