I was quoted in this week. Registered dietitian Carolyn O’Neil has a newspaper column, Healthy Eating Out in Atlanta,
and did a feature about a fish popping up on quite a few restaurant menus – arctic
char. Carolyn and I both researched this
delicious-sounding mix between salmon and trout, and discovered arctic char is
a hidden omega-3 gem. It’s also a
flexible fish – you can grill, steam, broil, poach, or blacken arctic char. Though I know the article was about eating
out, here is an at-home
recipe
worth trying that only has a handful of ingredients.
