Hangtown Frittata

Ingredients: 
2 cups mushrooms, sliced
1/4 cup green onion, sliced
1 tablespoon butter or margarine
1 (10-ounce) jar oysters, well drained
6 eggs
1 cup milk
1/4 teaspoon paprika
1/4 teaspoon pepper
2 tablespoons cooked, crumbled bacon
Instructions: 

Sauté mushrooms and onion in melted butter in an oven-proof skillet for 3 minutes. Pat oysters dry with a paper towel and add to mushroom mixture. Saute 1 minute or until oysters begin to curl. Drain any liquid. Remove skillet from heat and set aside. Beat eggs, milk, paprika and pepper with a wire whisk until well blended. Pour mixture over oyster mixture in skillet. Sprinkle with bacon. Bake at 400 degree F for 20 to 25 minutes or until set and browned. Cut into wedges to serve.
