Baked oriental flounder packets

Ingredients: 
2 flounder or sole fillets, each about 1/4 pound
1/8 teaspoon pepper
2 teaspoons oil
1 package (10 ounces) Japanese or oriental style frozen vegetables, thawed OR 2 cups mixed frozen vegetables, thawed
1 tablespoon low-sodium soy sauce
1 teaspoon corn starch
cooked rice (optional)
Instructions: 

Pat fish dry, season with pepper and place in baking dish. Heat oil in
medium skillet or wok until hot. Add vegetables and stir-fry over high
heat until tender-crisp, about 3 minutes. Combine soy sauce and corn
starch, add and stir-fry about 1 minute longer. Spoon vegetable mixture
over center third of fish, fold over ends of fish to enclose
vegetables. Cover with foil. Bake at 350 degree F about 10 minutes or
until fish flakes easily. Serve with rice if desired.

I did not actually make these into packets, rather spreading the vegetables on top of the flounder. The taste of the flounder was not very pronounced, the seasoned vegetables overpowered it: I still thought this was outstanding. I also added several drops of sesame flavoring oil to the peanut oil I was sauting the vegetables in. I think that this makes a profound, delicious difference! I totally loved this dish! Believe it or not I served this with Italian Risotto. Both dishes had very subtle yet different flavors which I found compelling! Using Italian Arborio Rice - I sauted 1 cup rice in 2 Tsbs. butter (Irish). Add ichopped onion and 1 tsp. garlic. Add 1/2 cup dry white wine, slowly add 3 cups hot chicken broth, 1/2 cup at a time until creamy. Fold in 3/4 cup grated Parmesan cheese. Serve immediately! I thought this was a great recipe!
