Tin Fish Gourmet

Today, one of my colleagues dropped by my desk to share a selection from her personal cookbook collection, Tin Fish Gourmet by Barbara-jo McIntosh.  The more I flip through it, the lower her odds of ever getting it back become.  As the description reads, "These mouthwatering recipes feature all your favorite canned seafoods; from salmon, tuna, and clams, to sardines, anchovies, and caviar. Includes delicious hors d'oeuvres, entrees, soups, salads, and sandwiches."  Nourishing food and convenience - two of my favorite things.  I know I have a few pouches of salmon at home, so I'm currently torn between Swiss Chard and Salmon Lasagna and Curried Salmon Loaf for tonight.  Eventually I will try both, along with many other easy, tasty recipes in the fabulous book.

I am a registered dietitian with the National Fisheries Institute, so fish is my nutrition forte. I earned my BA in Communication from Southwestern University, just outside of Austin, TX. During college, one of my very favorite evening outings was a leisurely trip to the grocery market. My passion for food was undeniable, so I combined both of my interests by earning my MS in Nutrition Communication from Tufts University in Boston, MA. As well as my Registered Dietitian (RD) credential through the University of Delaware.

Beyond reading scientific studies about docosahexaenoic acid and selenium, I love to entertain, travel, watch reality TV, grill outdoors, and go to spin class. I live in Kailua, HI on the island of Oahu where my husband serves as a US Marine Corps JAG.
