Supper Plan Sunday

I knew the 4th was coming soon, but only yesterday did I realize that it's this weekend!  So the four-day week is a lovely surprise!  Here is my wonderfully short Supper Plan Sunday.

Penne with turkey meatballs; mixed greens salad

Barramundi osso buco; white asparagus

Big Island!

 

As you can see, it's a very front-loaded supper plan.  In the grand tradition of last minute island hopping, we've decided to visit the Big Island over the 4th.  We just booked our airfare this morning, and will be figuring out our activities over the next couple days.  The Big Island is one of the only places on the planet with an active volcano - Kilauea.  So that'll definitely be on the to-do list.  Of course, I've already started looking in to restaurants and Rapanui Island Café has emerged as an early contender.

 

This trip is also the last push we needed to purchase a nice camera, so we plan to pull the trigger tonight.  That means that as early as dinner tomorrow, I will be posting much prettier pictures!

I am a registered dietitian with the National Fisheries Institute, so fish is my nutrition forte. I earned my BA in Communication from Southwestern University, just outside of Austin, TX. During college, one of my very favorite evening outings was a leisurely trip to the grocery market.
