Shrimp and jalepeno enchiladas

Last evening was Latin-inspired in more ways than one for Cinco de Mayo.  First, I went to Zumba, which is the only form of workout that I actually laugh and smile throughout.  I love it.  When I got home, I googled around for a Mexican dish I could make with shrimp from the freezer and found this Jalapeño Shrimp Enchiladas recipe, as well as this Restaurant-Style Mexican Rice recipe.  I didn't have Serrano peppers for the green enchilada sauce, but used bottled green salsa instead.  And I went for the layered shrimp enchilada casserole preparation option.  Let's just say the meal was so good I ate it not only for dinner last night...

It's my birthday today, so Lloyd has a surprise spot picked out for dinner.  I wish our families were here to celebrate with us.  On gorgeous days like this in Hawaii - sunny and 79 degrees - I always wish all my loved ones were here to experience it!

I am a registered dietitian with the National Fisheries Institute, so fish is my nutrition forte. I earned my BA in Communication from Southwestern University, just outside of Austin, TX. During college, one of my very favorite evening outings was a leisurely trip to the grocery market. My passion for food was undeniable, so I combined both of my interests by earning my MS in Nutrition Communication from Tufts University in Boston, MA. Beyond reading scientific studies about docosahexaenoic acid and selenium, I love to entertain, travel, watch reality TV, grill outdoors, and go to spin class. I live in Kailua, HI on the island of Oahu where my husband serves as a US Marine Corps JAG.

People in Hawaii eat more fish and shellfish than average, but over 80 percent of typical Americans don't eat seafood at least twice per week.
