Make MyPlate Pinterest Challenge

The United States Department of Agriculture says twice a week, make seafood the protein on your plate. Increase the amount and variety of seafood consumed by choosing seafood in place of some meat and poultry.

Meal planning to meet this goal just got a lot easier!  MyPlate now has a mouth-watering fish entrées board on Pinterest that highlights healthful seafood recipes from all over the most popular recipe websites.  We’re so excited about this new go-to resource for guaranteed good-for-you fish recipes that we’ve decided to try them out and tell you what we think.  Join us and take the MyPlate Pinterest Challenge by making a recipe from the MyPlate fish entrées Pinterest board twice a week.

I haven’t had many weird or super strong cravings throughout my pregnancy, but I do sometimes get an idea for a food in my head and not let much stop me until that food is in my mouth.  The funniest part is the unexpected inspiration behind these ideas.  For example, yesterday evening I went to an AquaFit class (a slightly more modern term for water aerobics) and we used water noodles for some of the exercises.  Flash forward to 15 minutes after class, and I could be found in the grocery store parking lot searching my smart phone for noodle casserole recipes.  I went with a salmon noodle casserole I found on ChefMD.com because it wasn’t heavy and featured a good amount of fresh veggies.  I also added one diced large chile pepper in place of the pepper sauce.  This is one of the few fish dishes that’s even better as leftovers and will be my lunch both today and tomorrow.    

Glad you liked it, Jennifer...I've always thought the same thing about those pool noodles: why couldn't they be edible? But they're not. So glad you found ones that are in one of my recipes...and yes, better the next day is always good. If there's any left. I am a registered dietitian with the National Fisheries Institute, so fish is my nutrition forte. I earned my BA in Communication from Southwestern University. During college, one of my very favorite evening outings was a leisurely trip to the grocery market. My passion for food was undeniable, so I combined both of my interests by earning my MS in Nutrition Communication from Tufts University in Boston, MA. As well as my Registered Dietitian (RD) credential through the University of Delaware. I live in Beaufort, SC where my husband serves as a US Marine Corps Judge Advocate. I love to entertain, travel, watch reality TV, grill outdoors, run, and practice yoga.
