Last night I made the salmon with lentils I had originally planned for Tuesday. I added my favorite spice, zatar, to both the lentils and the salmon.  Not really because they needed it, but because I’m always looking for any appropriate excuse to use it. Really tasty, simple meal that’s full of veggies in a subtle way. I was thinking the leftover salmon would be perfect for a summery pasta salad to take to the beach tomorrow and found this fresh recipe that includes peas, cottage cheese, lemon, and dill (mmm).  But then Lloyd took the last of the salmon to work for lunch. No problem, though, I always have a stash of pouch salmon to turn to.

I am a registered dietitian with the National Fisheries Institute, so fish is my nutrition forte. I earned my BA in Communication from Southwestern University, just outside of Austin, TX. During college, one of my very favorite evening outings was a leisurely trip to the grocery market. People in Hawaii eat more fish and shellfish than average, but over 80 percent of typical Americans don't eat seafood at least twice per week.
