The “4 servings” of risotto with clams I made last night became “2 generous servings” for Lloyd and I.  It was really good, and with all the stirring, we didn’t eat it until really late. I substituted basil for parsley simply because I had some I needed to use up, and opted for short brown rice instead of white for a little extra fiber. This weekend I’m running the last race I have planned for a while, the Coconut Chase 8k. I started tennis lessons about a month ago, so the rest of the summer through the fall is going to be all about getting good enough to play a game in public.  Which is a fairly lofty goal.  Hope you have a wonderful weekend!

I am a registered dietitian with the National Fisheries Institute, so fish is my nutrition forte. I earned my BA in Communication from Southwestern University, just outside of Austin, TX. During college, one of my very favorite evening outings was a leisurely trip to the grocery market. My passion for food was undeniable, so I combined both of my interests by earning my MS in Nutrition Communication from Tufts University in Boston, MA.
