Make MyPlate Pinterest Challenge

The United States Department of Agriculture says twice a week, make seafood the protein on your plate. Increase the amount and variety of seafood consumed by choosing seafood in place of some meat and poultry.

Meal planning to meet this goal just got a lot easier!  MyPlate now has a mouth-watering fish entrĂ©es board on Pinterest that highlights healthful seafood recipes from all over the most popular recipe websites.  We’re so excited about this new go-to resource for guaranteed good-for-you fish recipes that we’ve decided to try them out and tell you what we think.  Join us and take the MyPlate Pinterest Challenge by making a recipe from the MyPlate fish entrĂ©es Pinterest board twice a week.

Monday we had our “pack out,” which means a handful of very hardworking gentlemen came to our home, packed everything in it, and sealed it up in wooden crates to make the journey to South Carolina.  I’m convinced it’s just about the easiest way to move there is, but I did have to watch those guys like a hawk to make sure nothing in our “do not pack” piles accidentally got wrapped up and toted off.  They work quickly, so if you blink, you can miss your computer power cord or favorite sandals going to the bottom of a box.  It will be 6-8 weeks before we see anything that got packed on Monday again.  Now we’re down to just a couple suitcases each of belongings and an air mattress (which is actually just about as comfy as our real bed).  Meals are being largely outsourced, so we’re approaching restaurants with the same attitude I have during long work trips – choose the simplest, healthiest items on the menu as much as possible.  Last night we went to Uahi Island Grill and I got the red curry grilled mahi mahi.  It was delectable.  Today I’m working from one of my favorite cafes, Blue Hawaii Lifestyle, so one of their fantastic tuna melts may be in my future.

Jennifer McGuire, MS, RD

I am a registered dietitian with the National Fisheries Institute, so fish is my nutrition forte. I earned my BA in Communication from Southwestern University. During college, one of my very favorite evening outings was a leisurely trip to the grocery market. My passion for food was undeniable, so I combined both of my interests by earning my MS in Nutrition Communication from Tufts University in Boston, MA. As well as my Registered Dietitian (RD) credential through the University of Delaware. I live in Beaufort, SC where my husband serves as a US Marine Corps Judge Advocate. I love to entertain, travel, watch reality TV, grill outdoors, run, and practice yoga.
