This week I am trying to use up odds and ends from my giant grocery shop last week, so no menu plan.  Just a lot of creativity on my part, and open-mindedness on Lloyd's...  Today's lunch was an open-face salmon burger with salsa verde.  We're out of eggs, so the burger was a little abstract, but delicious just the same.  I mixed half a pouch of salmon, a spoonful of mayo, several dashes of Texas Pete hot sauce, a couple crumbled crackers, and the juice of half a lime; formed a "patty;" and heated it in an oiled skillet for about 2 minutes per side.  A toasted sliced of Fitness Bread served as the bun, jarred salsa verde was the ketchup, and some chopped fresh cilantro was the lettuce.

I am a registered dietitian with the National Fisheries Institute, so fish is my nutrition forte. I earned my BA in Communication from Southwestern University, just outside of Austin, TX.
