Greetings from Boston

curried salmon loaf

Today and tomorrow I am in Boston, a true seafood town, for the 2008 Tufts University Friedman School Symposium. I am most looking forward to the discussions about the 2010 Dietary Guidelines for Americans, which are published every five years and serve as the cornerstone for most all nutrition policy. The 2005 version is positive about seafood, but not as clearly encouraging as is warranted, especially for the special population of pregnant and breastfeeding mothers.  Obviously the Dietary Guidelines Advisory Committee will have a lot of food issues on their plate, but I'll be working to ensure the latest science demonstrating the importance of eating plenty of seafood is one of them.

Oh, and I did end up making the curried salmon loaf recipe the night before last, and will post a picture here when I get back to DC.  Tonight, I'm hoping to eat some good old fashioned New England seafood with maybe a seasonal autumn beer!

About Jennifer

I am a registered dietitian with the National Fisheries Institute, so fish is my nutrition forte. I earned my BA in Communication from Southwestern University, just outside of Austin, TX. During college, one of my very favorite evening outings was a leisurely trip to the healthful food market. My passion for food was undeniable, so I combined both of my interests by earning my MS in Nutrition Communication from Tufts University in Boston, MA. As well as my Registered Dietitian (RD) credential through the University of Delaware.

Beyond reading scientific studies about docosahexaenoic acid and selenium, I love to entertain, travel, watch reality TV, grill outdoors, and go to spin class. I live in Washington, DC and am surrounded by a cast a characters you will get to know as you read my blog, including my fiancé (Lloyd), my cat (Miles), and my three sisters.
