Eggplant and anchovy pizza

Lloyd and I tried to take advantage of Oahu over the weekend, because we are going to be off-island three of the next four weekends (two weddings in California and a relay race on Maui).  So Saturday we spent a good five hours on a spectacular hike called Manoa Cliff Trail to Nuuanu trail to Judd/Jackass Ginger Pool.  I'm only sharing the long and complicated name because if you ever get the chance to go, this is the best hike we've done on Oahu.

It's also right by the Round Top Drive lookout, which offers THE best view of Honolulu (and beyond).

Since we're going to be gone so much over the next few weeks, my fear of wasting food has me gobbling up any and all leftovers and perishable food.  This morning that resulted in a delicious slice of leftover homemade eggplant, green olive, mushroom, caper, and anchovy pizza for breakfast.  So count this as one of the very limited fish for breakfast pictures I've ever posted.

I am a registered dietitian with the National Fisheries Institute, so fish is my nutrition forte. I earned my BA in Communication from Southwestern University, just outside of Austin, TX. During college, one of my very favorite evening outings was a leisurely trip to the grocery market.
