Make MyPlate Pinterest Challenge

The United States Department of Agriculture says twice a week, make seafood the protein on your plate. Increase the amount and variety of seafood consumed by choosing seafood in place of some meat and poultry.

Meal planning to meet this goal just got a lot easier!  MyPlate now has a mouth-watering fish entrĂ©es board on Pinterest that highlights healthful seafood recipes from all over the most popular recipe websites.  We’re so excited about this new go-to resource for guaranteed good-for-you fish recipes that we’ve decided to try them out and tell you what we think.  Join us and take the MyPlate Pinterest Challenge by making a recipe from the MyPlate fish entrĂ©es Pinterest board twice a week.

For our last dinner in Charlottesville we resisted a repeat visit to Miyako (barely) to knock another new restaurant off our list.  Zocalo was described as Mexican, but also had touches of Cuban and Spanish.  I started with the gazpacho with crabmeat in the middle and Lloyd got the spinach salad with fried oysters. They were both delicious, but Lloyd won that round. Then we split the chili-dusted scallops, which were unique – sweet, spicy, rich, and completely gone in about 10 minutes. 
 
Today we’re driving back up to D.C. where we’ll be parting ways for about five weeks. I’m going back to our Hawaii homestead and Lloyd is going to California for pre-deployment training. We found out recently that he’s officially going to Afghanistan in November for seven months. It’ll be a big change and we’ll miss each other terribly, but he’s energized by the opportunity and I have great friends and family to keep me company.

In my role as a registered dietitian with the National Fisheries Institute, I track and translate the latest news on the nutritional benefits of seafood. My background includes degrees in Human Nutrition and Communications. I work with food and beverage groups, as well as individuals, teach nutrition to culinary students and create wellness programs for employers. I also often provide commentary for news media. When I am not cooking a healthy meal or running after my two young children, you can find me running, hiking or practicing yoga.

 

Jennifer McGuire, MS, RD

I am a registered dietitian with the National Fisheries Institute, so fish is my nutrition forte. I earned my BA in Communication from Southwestern University. During college, one of my very favorite evening outings was a leisurely trip to the grocery market. My passion for food was undeniable, so I combined both of my interests by earning my MS in Nutrition Communication from Tufts University in Boston, MA. As well as my Registered Dietitian (RD) credential through the University of Delaware. I live in Beaufort, SC where my husband serves as a US Marine Corps Judge Advocate. I love to entertain, travel, watch reality TV, grill outdoors, run, and practice yoga.
