The United States Department of Agriculture says twice a week, make seafood the protein on your plate. Increase the amount and variety of seafood consumed by choosing seafood in place of some meat and poultry.
I've had two nice long jogs this week in preparation for a 10k I'm running on Saturday, so when I woke up this morning, I was ravenous. Cereal with fruit wasn't going to cut it, but I still wanted something healthful, so of course I thought of fish. What I ended up making is loosely based on Crab Cakes Benedict.
First I toasted half of a whole wheat English muffin.
Then (to represent the Béarnaise sauce), I mixed a bit of canola mayonnaise with lemon juice and spread on the muffin.
On top of the lemon mayo went a salmon burger.
And finally, a poached egg with salt and pepper.
Normally I wouldn't put more than a few minutes of effort in to breakfast, but it was a hearty, comforting way to start the day and kept me full for hours.
