  • I'm finally feeling better today, and just my luck, it's Friday!  I think last night's dinner would have brightened anyone's spirits - we threw it together using what we already had in the kitchen, and it was the perfect Polynesian feast.  First and foremost (we can't take credit for these) were the shrimp infused steamed rice noodles.  They were featured on my parents'-in-law food tour (which they raved about), and they brought some home for Lloyd and I to try.  They were melt-in-your-mouth heavenly.  Just imagine the best homemade

  • My parents-in-law were so impressed with Tamashiro's that they returned yesterday while they were out and about exploring Oahu on their own.  This time they picked up red snapper and opah (also known as moonfish).  So instead of dinner out, we grilled in, which was just right for me in my less-than-100-percent state.  We marinated the snapper in olive oil, salt, pepper, limes, and dill for about 30 minutes and then tossed it on the grill alongside some asparagus.  We got a little impatient and initially removed the fish from the grill too

  • Yesterday afternoon my parents-in-law arrived, and we wasted no time flaunting the fresh seafood Hawaii has to offer.  Straight from the airport, Lloyd made a beeline for Tamashiro's to show it off and get four servings of our favorite yellow fin tuna.  And then, since I wasn't feeling well, he cooked the entire Seared Ahi Tuna meal for us while we visited.  Just like last time, we served the fish atop shredded cabbage.  It was fresh and nourishing - perfect for his

  • I'm not feeling well this week, but had a very fun weekend (the two may be related).  Sunday night was a barbeque at our friend's new house in Lanikai.  The get together was great - not only because of the lovely location (Lanikai is home to one of the top ten beaches in the world), but because the hostess is an excellent cook.  She made salad, steak with onions, and perfectly grilled scallop skewers.  They were so pretty; I took a picture before and after.

  • I can't help but to be in a happy mood on Friday afternoons, arguably my favorite few hours of the entire week.  I'm looking forward to a girls' night out tonight - we're meeting for pupu and drinks before going to a reggae concert.  Tomorrow morning is Summer Jogging Club, followed by a group brunch at Bob's Big Boy.  And then before I know it my parents-in-law arrive on Tuesday for a week-long visit.  So I'm in for a serious out to eat stretch.  Whenever restaurant meals start to outnumber my meals at home, I like to be mindful of

  • The last couple days have been busy beyond belief.  So this will be a speedy blog, featuring two speedy seafood meals.  For lunch yesterday I concocted a tuna noodle stir-fry by sautéing canned tuna, frozen lima beans, and sea asparagus in peanut oil (estimated time = 5 minutes) and mixing with cooked soba noodles (estimated time = 8 minutes).

  • We had a busy Saturday full of errands and entertaining, and a lazy Sunday full of laundry and lounging.  I was happy that on Saturday we managed to fit in a trip to Tamashiros fish market for more Ahi tuna (it was SO good last time), as well as Mahi Mahi and scallops.  A friend met us there to see what it was all about (he ended up buying some Ahi too), and then we all got lunch at the amazing Chinese restaurant from our honeymoon, Little

  • Today is the third Friday of Lent, the 40-day (not including Sundays) period of time between Ash Wednesday and Easter Sunday.  Lent is steeped in dietary traditions.  Historically, people fasted for 40 days - either Monday through Friday, but not on weekends or Monday through Saturday.  The definition of fasting varied.  It could mean no food or drink, one meal a day, no animal products, or no animal products except fish.  Now, the tradition has generally evolved to meatless Fridays, except fish.

I am a registered dietitian with the National Fisheries Institute, so fish is my nutrition forte. I earned my BA in Communication from Southwestern University, just outside of Austin, TX. During college, one of my very favorite evening outings was a leisurely trip to the grocery market. My passion for food was undeniable, so I combined both of my interests by earning my MS in Nutrition Communication from Tufts University in Boston, MA. As well as my Registered Dietitian (RD) credential through the University of Delaware.

Beyond reading scientific studies about docosahexaenoic acid and selenium, I love to entertain, travel, watch reality TV, grill outdoors, and go to spin class. I live in Kailua, HI on the island of Oahu where my husband serves as a US Marine Corps JAG.

People in Hawaii eat more fish and shellfish than average, but over 80 percent of typical Americans don't eat seafood at least twice per week.
