Cod

Cod is a delicate, sweet tasting fish that is usually available for purchase as a skinless fillet or, less often, as a seafood steak. Its mild flesh readily takes on the taste of added seasonings, so use them lightly to start.

Cod fillets may be prepared using a variety of cooking methods, although grilling is difficult since the flesh tends to flake apart and stick to the grill-use a non-stick grill basket if you want to attempt this cooking technique. Cod is moist and flavorful when a combination of cooking methods is used, such as oven-steaming. Salsas, chutneys, relishes, and sauces add flavor to baked or shallow-poached cod. And lightly-battered, deep-fried cod is delicious on its own with a squeeze of lemon or as the main ingredient of a fish sandwich.

Cook cod until the flesh turns opaque and begins to flake easily. Allow to rest for two minutes or so before serving.
