The red snapper with chunky tomato-bell pepper sauce I had planned for dinner Tuesday became cod with chunky tomato-bell pepper sauce for dinner Thursday.  Our grocery store was out of red snapper, but this is never a reason to fret.  Simply pick another remotely-similar type of fish.  If you don't know what's similar, ask the fishmonger for a couple suggestions.  Or if the preparation is as universal as the chunky tomato-bell pepper sauce, just wing it.  That sauce would have been good on eel.  I mostly followed the recipe, but substituted canned diced tomatoes and Italian seasoning for bottled tomato sauce.  For me, opening up a can of diced tomatoes and tossing in my own seasonings is just as easy as opening up a bottle of premade sauce.  Plus it's less expensive and I get more control over the ingredients (always looking for ways to exercise my control-freak tendencies!).  This weekend we're going to the LOST premier in Waikiki, so stay-tuned for the scoop on the first hour of the first episode of the final season.
